Pumpkin Spice Muffins

Gluten Free Pumpkin Spice Muffins—these will not dissapoint!

It’s Fall and you are craving your first pumpkin muffin of the season, this recipe is it.

Here’s what you need:

2 Eggs

1/4 cup olive oil

1/4 cup avocado oil

15 oz can pumpkin

1 tsp vanilla or vanilla paste

1/4 cup honey

1 cup oat flour

3/4 cup almond flour

3/4 cup coconut sugar

1 1/2 tsp ceylon cinnamon

1/4 tsp cloves

1/4 tsp nutmeg

1/2 tsp salt

3/4 tsp baking soda

Here’s What You Do:

  1. Whisk well pumpkin, eggs, oils, vanilla and honey in a bowl.

  2. Whisk flours, sugar, spices, salt and b.soda in a bowl.

  3. Gently combine wet and dry ingredients.

  4. Pour batter into muffin tin lined with baking cups.

  5. Bake at 375 degrees for 18-22 mins.

  6. Enjoy!
