Bean and Veggie Chili
Get in your veggies and beans with this delicious and nourishing chili!
What You Need:
1 onion
1-2 zucchini
1 jalapeno (seeded)
1-2 red pepper and or orange pepper
2 green onion
Cup of frozen corn
4 cloves garlic
1 15 oz can pinto beans
1 15 oz can garbonzo beans
1 15 oz can of black beans
1 15 oz can stewed tomatoes
1 oz can tomato sauce
1/2 pepper in adobo sauce chopped (optional)
32 oz of vegetable broth
Spices:
1 tsp cumin
1 tsp chili powder
1/2 tsp smoked paprika
1/4 tsp turmeric
What to do:
Chop onions, zucchini, pepper, and jalapeno. Sprinkle with 1 tsp salt and saute for 5 mins on medium.
Add chopped garlic, cumin, turmeric, chili powder, and smoked paprika. Saute for 5 more mins. Use broth to deglaze.
Add beans (after rinsing and soaking), tomatoes, pepper in adobo sauce chopped, and tomato sauce.
Add veg broth to cover ingredients and then add 1 tsp sat.
Bring to boil then simmer for 15-20.
Serve with roasted sweet potatoes, crackers or tortilla chips!
