Bean and Veggie Chili

Get in your veggies and beans with this delicious and nourishing chili!

What You Need:

1 onion

1-2 zucchini

1 jalapeno (seeded)

1-2 red pepper and or orange pepper

2 green onion

Cup of frozen corn

4 cloves garlic

1 15 oz can pinto beans

1 15 oz can garbonzo beans

1 15 oz can of black beans

1 15 oz can stewed tomatoes

1 oz can tomato sauce

1/2 pepper in adobo sauce chopped (optional)

32 oz of vegetable broth

Spices:

1 tsp cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/4 tsp turmeric

What to do:

  1. Chop onions, zucchini, pepper, and jalapeno. Sprinkle with 1 tsp salt and saute for 5 mins on medium.

  2. Add chopped garlic, cumin, turmeric, chili powder, and smoked paprika. Saute for 5 more mins. Use broth to deglaze.

  3. Add beans (after rinsing and soaking), tomatoes, pepper in adobo sauce chopped, and tomato sauce.

  4. Add veg broth to cover ingredients and then add 1 tsp sat.

  5. Bring to boil then simmer for 15-20.

  6. Serve with roasted sweet potatoes, crackers or tortilla chips!
