Fresh Chickpea Salad

Spring is around the corner and I am craving fresh flavors like lemon and parsley. I prepared this salad to satisfy my craving and it hit the spot. It combines fresh herbs with vegetables like cucumber, tomato and a little celery and hearty chickpeas. It is delicious on its own or in a wrap. Hope you give it a try!

Here’s What you Need:

1 can chickpeas (rinsed and outer shell removed)

1 mini seedless cucumber

2 small stalks of celery

10-12 ripe red cherry tomatoes

1/3 cup parsley chopped finely

1/4 cup of red onion chopped finely (let sit in a bowl of water for 10 mins to take the bite away)

2 cloves garlic minced

3 Tablespoons Olive Oil

1 1/2 Tablespoons Freshly squeezed lemon juice

3/4 tsp sea salt

Fresh cracked black pepper to taste

Here’s What to Do:

  1. Chop red onion into very small pieces then place in bowl of water for 10 mins.

  2. Chop cucumber, tomatoes, celery, parsley, garlic and add to a salad bowl.

  3. Add in rinsed and shelled chickpeas.

  4. After 10 mins, drain red onion and add into bowl.

  5. Mix olive oil and lemon juice then dress the salad with it.

  6. Season with salt and black pepper.

  7. Let sit for a few hours then enjoy!
