Banana Oatmeal Muffins

Banana muffins make everyone happy, especially my son Jack. I’ve played around with so many banana muffin recipes like these banana muffins but wanted something healthy and hearty enough for breakfast. The recipe below has more oats, bananas and a little less oil so they could be a quick healthy breakfast grab for a college student on the go. As an option for added sweetness I topped it off with coconut sugar, oats and a little butter for the topping but this step could be skipped and you wouldn’t miss the deliciousness of this muffin!

Here’s What You Need:

4 bananas

1/4 cup oil (I used coconut but you could use avocado for less saturated fat)

1/4 cup unsweet applesauce

1 egg

1 tsp vanilla

1 1/2 cups organic oats

1 2/3 cup oat flour

1 1/2 tsp baking powder

1/2 cup coconut sugar

1 tsp baking soda

Cinnamon, nutmeg, salt

Topping:

1/2 cup oats. 2 tablespoons coconut sugar, 1 tablespoon butter ( quite softened)

Here’s What You Do:

  1. In one bowl, combine oats, oat flour, baking soda, baking powder, pinch of salt, 1 tsp cinnamon, pinch of nutmeg and 1/2 cup coconut sugar.

  2. In another bowl mash 4 bananas.

  3. Add oil, applesauce, egg and vanilla to mashed bananas.

  4. Combine wet and dry ingredients.

  5. Pour batter into lined muffin pan (makes 12).

  6. Mix topping then place a little fingerful on top of each muffin.

  7. Bake at 375 for 17-23 mins. Use a toothpick to check on doneness.

  8. Enjoy—your body will thank you for it!
