Date Snickers Bar Bites

I recently played around with snickers bites, wanting a quicker bar type recipe and I made these. Sharing with my workout friends and school friends, I was asked to share this recipe. I hope you give it a try and have success with this nutrient dense treat!

Here’s What you Need:

Bottom layer: crust

1 cup dates

1 cup mixed nutes

3/4 cup of oats

1 tablespoon of coconut cream (just the cream not the liquid)

Middle Layers: date caramel and peanuts

1 cup of dates

1/2 cup of date syrup

1/2 cup of coconut milk

1 tsp vanilla

pinch of salt

1/2 cup chopped peanuts

Top Layer: chocolate

1/3 bag of chocolate chips

teaspoon of coconut oil

Here’s What You Do:

  1. Add a cup of dates, cup of mixed nuts, 3/4 cup of oats and tablespoon of coconut cream. Mix on high until small pieces form into moldable dough like consistency. Press this mixture into a parchment covered 8 inch square pan and place in freezer for about 20 mins.

  2. Add cup of dates, 1/2 cup date syrup, 1/2 cup coconut milk, vanilla and pinch of salt to sauce pan. Heat and stir on low to medium low for about 10 mins until dates begin to break down.

  3. Add cooled date mixture to blender, add an ice cube or a couple tablespoons of water to thin out. Blend until your date caramel forms consistency you prefer.

  4. Spead date caramel onto frozen crust. Top with chopped peanuts then place back in freezer for 15 mins.

  5. Melt 1/3 bag of chocolate chips with a teaspoon of coconut oil. Spread melted chocolate over peanut layer and place back in freezer to set for about a half hour.

  6. When bars are chilled, top with sea salt and cut into squares!
