Sweet Potato Brownies

Good for you and delicious brownies: add sweet potatoes! These have my favorite ingredients: nut butter, coconut sugar, chocolate chips and of course: sweet potato!

Here’s What You Need:

Medium sized sweet potato (roasted at 400 degrees F for 40 mins, then peel to use inrecipe

1/ 2 Cup Nut butter ( I’ve made this recipe with almond butter and peanut butter—both delicious)

1/2 Cup Cacao powder

1 Cup Coconut Sugar (you can use less if you like)

1 Egg or Flax Egg (1 TBSP ground flax with 2 TBSP water)

2 TBSP Coconut Oil (melted then cooled to room temp)

1 tsp Vanilla Extract

1-2 TBSP Almond Milk

1/4 Cup Oat flour

1 tsp Baking powder

1/4 tsp Salt

9x9 glass pan

Here’s What You Do:

  1. Add 1 (roasted) medium sweet potato, nut butter, cacao powder and coconut sugar then mash well with potato masher.

  2. Add egg (or flax egg), 2 TBSP of coconut oil, vanilla extract, almond milk and whisk for a minute until smooth.

  3. Stir in oat flour, baking powder and salt. (the mixture should be thick but not so thick you can’t )

  4. Spread onto parchment covered 9x9 pan and top with semisweet chocolate chips

  5. Bake at 350 for 30 -40 mins

  6. Top with sea salt.
