Roasted Tomatoes

Time to make these delicious tomatoes just in time for the end of summer when the picking is still good!

What You Need:

Pan

Parchment paper

2-3 medium to large tomatoes

4-5 Garlic Cloves

olive oil

sea salt

dried oregano

dried thyme

What to Do:

Preheat Oven to 400 degrees F

  1. Cover pan with parchment.

  2. Cut tomatoes in segments of equal size and place on pan.

  3. Add peeled garlic cloves to pan with tomatoes.

  4. Sprinkle a generous amount of sea salt on tomatoes.

  5. Shake about 1-2 tsp of oregano and thyme on tomatoes.

  6. Drizzle a tablespoon or 2 of olive oil on top of tomatoes and garlic—-make sure garlic cloves are sitting in olive oil to help avoid burning.

  7. Roast in oven for 20 mins

  8. Add to pasta, pasta salad, bean dishes, soups and more!
