Chocolate Rice Cake Bars

5 ingredients are all you need to make this delicious and easy treat! You won’t regret it! This recipe is inspired by all the healthy foodies that have been posting recipes using rice cakes. This is my version of a healthy candy like bar using my favorite ingredients.

Chocolate Rice Cake Bars

What you need:

3 Rice cakes (I suggest made with organic brown rice)

1/3 cup natural peanut butter

1/4 honey (local is best)

1 Tablespoon Hemp Hearts

6 squares Ghiradelli Semi Sweet Chocolate Squares (or your choice dark choc)

a bread pan (9x5 or 8x4 ish)

parchment paper

What to do:

  1. Using your hands, break up the 3 rice cakes into small pieces and add them to a bowl.

  2. Add in your peanut butter, honey and hemp seeds and mix.

  3. Press mixture into a parchment lined bread pan; do your best to press it evenly.

  4. Place pan with rice mixture in the freezer for 20 mins.

  5. Microwave the 6 squares of chocolate—I usually heat and stir every 30 secs in microwave until melted. ( optional add a 1/2 tsp coconut oil to thin out your chocolate)

  6. Pour melted chocolate over frozen rice mixture then place back into freezer for 10 mins.

  7. Cut and enjoy!
