Apple Banana Pancakes
If you are looking for a naturally sweet breakfast, these pancakes made with an apple, banana and oat flour are packed with fiber and nutrients. And—no added sugar in the batter ! They are delicious on their own or with a little syrup/honey.
Here’s What you Need:
1 peeled and cup up apple ( I used Fuji)
1 Banana
1/2 cup plant milk (or more if you like thinner pancakes)
1 flax egg. (3 Tablespoons water mixed with 1 Tablespoon ground flax seed ) *let set for about 10 minutes in fridge OR sub with an egg
1 tsp vanilla
1 and 1/2 cups oat flour
1/2 tsp salt
2 tsp baking powder
Optional : shake of nutmeg, cinnnamon
Here’s What You Do:
Make your flax egg and let it set in fridge.
In a blender, add peeled and cut up apple, banana, plant milk , vanilla and flax egg—-Mix well.
In a bowl, combine dry ingredients: oat flour, salt, baking powder, spices.
Pour wet mixture from blender into bowl of dry ingredients. Stir to combine. Add more milk for thinner batter if you like.
Use oil or butter to grease a pan/skillet and turn on medium low.
Add batter and turn heat up slightly and slowly. When bubbles have stopped, flip your pancake.
Add honey or maple syrup.
