Almond Chocolate Chip Cookies

Light and crisp, these cookies will satisfy your sweet tooth without heavy ingrdients.

What You Need:

1 egg or 1 flax egg

1/4 cup coconut sugar

1/4 cup maple syrup

1/3 cup almond butter

3 TBSP of grass fed butter , vegan butter or olive oil

1/8 -1/4 tsp of almond extract (optional)

3/4 cup blanched almond flour

3/4 cup oat flour

1/4 cup roasted and chopped almonds ( I chopped mine and roasted in 350 degree oven for 9 mins)

1/3 cup dark chocolate chocolate chips

What You Do:

  1. Set oven to 350 degrees.

  2. Melt butter and add to bowl with flax egg, coconut sugar, maple syrup, almond butter and almond extract. Whisk.

  3. Add flours, b.soda, b. powder and salt, stir until combined.

  4. Stir in roasted almonds and chocolate chips.

  5. Place in fridge for 20-30 mins—this is important to give almond flour time to absorb wet ingredients.

  6. Using a cookie scoop, place dough on stone pan. Bake for 10-12 mins.

  7. Enjoy!
