My Minestrone

The homemade roasted tomatoes give this soup so much flavor. It is a favorite here!

Here’s What You Need:

1 onion

2 medium carrots

2 stalks celery

1/2 large zucchini

1 Tablespoon olive oil

1-2 tsp salt

1/2 tsp thyme

1/2 teaspoon oregano

2 bay leaves

roasted tomatoes OR 30 oz can of fire roasted tomatoes from grocery

*if you use canned tomatoes add some chopped garlic to your soup in step 1

2 cans butter beans or white beans of your choice

approximately 48 ounces of broth of your choice ( I like to use as much broth so that the veggies and beans are just covered)

Here’s What You Do:

  1. Chop onion, carrots, celery, zucchin into similar size pieces. Add to pot with olive oil, salt and seasonings and cook on medium low for 5-10 mins until vegetables are softened.

  2. Add roasted tomatoes, rinsed beans, bay leaves and broth.

  3. Bring to boil then turn to a simmer with the lid ajar. Simmer for 20 mins until veggies are soft.

  4. Serve with bread or crackers!
