Sweet Roasted Vegetables

What you need:

1 small squash

1 small zuchini

1/2 small green cabbage

1 large carrot

3 green onions

sea salt

garlic salt

onion salt

olive oil

roasting pan

parchment paper

What to do:

  1. Preheat oven to 400 degrees farenheit

  2. Using a mandolin, slice cabbage, zucchini, squash and carrot. Then hand chop 3 green onions.

  3. Place all vegetables on parchment covered roasting pan.

  4. Drizzle vegetables with 2 tablespoons of olive oil and 1 tsp of salt, onion powder and garlic powder. Massage vegetables thoroughly to distribute seasonings before placing in oven.

  5. Roast for 15 -20 mins. I prefer to start with 15 and add 5 more if needed.

Only a few ingredients and a few minutes are needed for these delicious roasted vegetables.
