White Chocolate Nut Bark

If you want to indulge with healthier treats during the holidays, my White Chocolate Nut Bark is a great option. Made with honey and dates to sweeten, this bark will satisfy your sweet tooth.

Here’s What you Need:

2 cups roasted peanuts

1 cup walnuts

1/2 cup natural peanut butter

1 cup dates (chopped)

2/3 cup local honey

1/2 teaspoon salt (if your peanuts aren’t salted)

3 oz Organic White Chocolate

Sprinkles (optional)

food processor

8x8 or 9 x 13 glass baking dish depending on your desired thickness for the bars

Here’s what you do:

  1. Add peanuts, walnuts, chopped dates, and peanut butter to food processor. Pulse 30- 60 secs until crumbly mixture forms. You may need to scrape the bottom of the processor bowl in between pulsing.

  2. Pour mixture into a large bowl and stir in honey and salt.

  3. Line your glass baking dish with parchment paper and press nut mixture into dish about 1/2- 1 inch thickness. Then using parchment on top of the mixture as well, press with a cup or small wooden pastry roller to help distribute.

  4. Place in refrigerator to set for about 30 mins. Then bake for 15 mins at 350 and cool.

  5. After the nut bark has cooled, drizzle melted white chocolate and immediately top with sprinkles.

  6. Cut in shapes of your choice and keep in refrigerator.

  7. Enjoy!
