Simple Peanut Butter Cookies
These six ingredient cookies are easy and delicious. They are a healthier take on the traditional peanut butter cookie AND gluten free!
Here’s what you need:
1 cup natural peanut butter
1/3 cup honey ( you can increase if you like it sweeter but this was plenty sweet for us)
1 egg white
1/3 cup organic oat flour
1 tsp vanilla
Flaky sea salt
optional: topping Hu Milk Chocolate Bar (I used Cashew Butter Milk Chocolate).
Here’s what you do:
Preheat your oven to 350
Add peanut butter and honey in a bowl and stir until well combined with a whisk.'.
Beat your egg white in a separate bowl with hand mixer until light and airy-30-45 sec.
Fold in the egg white into peanut butter mix and add teaspoon of vanilla. Last, sift in 1/3 cup organic oat flour and stir gently.
Using clean hands, scoop a tablespoon in your hand and roll into a ball. Then set on ungreased cookie sheet, I recommend using a baking stone.
Use a fork to make a criss cross pattern atop each one.
Bake in over for about 10 mins or until light brown on edges.
Top with salt—don’t forget it. Or add your favorite chocolate on a few.
