Simple Peanut Butter Cookies

These six ingredient cookies are easy and delicious. They are a healthier take on the traditional peanut butter cookie AND gluten free!

Here’s what you need:

1 cup natural peanut butter

1/3 cup honey ( you can increase if you like it sweeter but this was plenty sweet for us)

1 egg white

1/3 cup organic oat flour

1 tsp vanilla

Flaky sea salt

optional: topping Hu Milk Chocolate Bar (I used Cashew Butter Milk Chocolate).

Here’s what you do:

Preheat your oven to 350

  1. Add peanut butter and honey in a bowl and stir until well combined with a whisk.'.

  2. Beat your egg white in a separate bowl with hand mixer until light and airy-30-45 sec.

  3. Fold in the egg white into peanut butter mix and add teaspoon of vanilla. Last, sift in 1/3 cup organic oat flour and stir gently.

  4. Using clean hands, scoop a tablespoon in your hand and roll into a ball. Then set on ungreased cookie sheet, I recommend using a baking stone.

  5. Use a fork to make a criss cross pattern atop each one.

  6. Bake in over for about 10 mins or until light brown on edges.

  7. Top with salt—don’t forget it. Or add your favorite chocolate on a few.

  8. These go fast so enjoy!
