Healthy Pancakes

I love making pancakes on the weekend. They are eaten up quickly here! This recipe makes about 10 pancakes. It was inspired by a recipe by @daddys_nom’s posted on his blog. He also has a different variation of the recipe on Instagram. I made it my own with some buckwheat flour—you can use a flour that speaks to you.

To a blender add:
1 banana
3/4 cup unsweetened applesauce
@thrivemarket has the best
1/2 cup plant milk — I used oat
1 egg ( you could use a flax egg )
A tsp of vanilla

A tsp of cinnamon
A 1/2 tsp nutmeg ( or leave out the spices if you aren’t a fan)
1 and 1/2 cups oat flour ( I used 1 cup oat and 1/2 cup
@bigboldhealth buckwheat for added nutrition)
2 tsp baking powder
1/2 tsp salt

Blend on medium until combined. Allow it to rest for a minute.

Pour in a warm pan — I used 💯 grass fed butter to grease mine but you could use avocado oil or olive oil for a less saturated fat option.

Flip after the bubbles have popped and you have some of the healthiest and yummy pancakes!
