Granola Bark
Ingredients:
1 and 1/2 cup almonds
1/2 cup almond butter
1 cup dates
1 and 1/2 cups oats
2 tablespoons chia seeds
2 tablespoons hemp seeds
2/3 cup honey
1 - 1 1/2 bags of @enjoylifefoods dark chocolate chips ( I like these because the first ingredient is chocolate and they are dairy free).
Flaky salt
1. In a large food processor, add almonds, oats then dates and almond butter on top. Pulse until crumbs form. You may need to scrapes the sides of processor a few times.
2. Pour this mixture in a bowl and add chia seeds, hemp seeds, and honey.
3. Press this mixture onto a parchment covered 9x 13 tray. I suggest using a baking stone. I use a piece of parchment to press and a small rolling pin to smooth across pan. Refrigerate for a couple hours to set.
4. Set oven to 350 when ready to bake. Bake for 15-18 mins. I took mine out when the sides begin to brown and you begin to smell the almonds and honey after about 16 mins.
5. Let cool and as it does melt 1/2 bag of Dairy free dark chocolate chips by @enjoylifefoods with a teaspoon of coconut oil. After melting chocolate, spread over the top of the granola bark. Freeze for 30-45 mins.
6. Take frozen granola and flip it. Repeat chocolate melting and spread a layer of chocolate on the opposite side of the granola bark. Freeze for another 30-40 mins.
7. Take granola bark out of freezer and sprinkle flaky salt on top. Cut into pieces of granola bark and store in a airtight container in the fridge.
